Enjoy this wonderful recipe with food straight from the farm.
1 pie crust
1 bunch spinach, shredded in tiny strands
8 oz cheese
1 smallish onion
2 T flour
1/2 t salt
Preheat oven 325 degrees. Saute spinach lightly and pour off liquid. Shred cheese and toss with flour. Very finely dice onion. Beat eggs and milk, then mix in cheese, spinach, onion, nutmeg and salt.
Bake in oven 45-60 minutes, until eggs are set. It may be helpful to cover flutes of crust with foil when baking.
