Baked Whole-Wheat Strawberry Doughnuts

Makes approx. 10-12
Isolated fruits - Strawberries1 ¼ cup whole-wheat flour
1 tsp. baking powder
½ tsp. salt
2 Tbsps. softened butter
½ cup sugar
1 large egg
½ cup buttermilk
1 tsp. vanilla
1 cup fresh strawberries, cut into small pieces
Preheat oven to 375 degrees. Grease a doughnut pan and dust with flour. In a large bowl, combine the dry ingredients. In a stand mixer (or using a hand mixer), cream the butter and sugar together. Add the egg, buttermilk and vanilla and mix until well combined. Add the dry ingredients to the wet and mix until just combined. Gently fold in the strawberries. Spoon batter into the prepared doughnut pan (filling each well ¾ full). Bake for 14-16 minutes or until the tops spring back when lightly pressed. Enjoy!
